Japanese kitchen knife santoku by Gihei Hamono. The Santoku is the Japanese version of the chef’s knife. Blade is made of SLD steel.  SLD stainless steel was originally designed by Hitachi for cutting other steels. It holds an edge as long as a carbon steel but is much easier to care for. The base of the steel is SKD11 with hardness up to 61-63HRC. This Gihei Hamono santoku has a handle of magnolia.
